Anyways, the great thing about feeling a little under the weather is you crave home cooking or comfort food. So, I took the initiative to create a new soup! My Black bean and Corn Spicy Soup.
Ingredients:
- Can of Sweet Corn
- Can of Black Beans
- 3 types of onions (Red, White, Green)
- Hot pepper
- Garlic clove
- Basil
- Vegetable Broth
Directions:
- Chop about 1 cup of onions up and toss into a large soup pot.
- Drain cans of sweet corn and black beans and put in the pot
- Cut 1 Hot Pepper, garlic and basil and put in pot
- Put two cups of water in.
- Generous amounts of pepper and garlic powder.
- 1 cup of vegetable broth.
- Place cover and let soup simmer on low for an hour.
- SERVE!
Its delicious and nutritious! Plus, because the soup is super spicy it clears my sinus's right out!
